“All the animals, they like the coconut.”
My friend Andy says this to me as I recline on a wooden
bench at his café on Costa Rica’s Caribbean coast. I am waiting for my coconut
curry rice and lobster. Andy caught the succulent shellfish earlier in the day
using coconut for bait.
Coconut grows everywhere here. An important food source,
easily accessible and highly valued, it is used in just about everything. Local
guys use long poles to break the huge nuts free from the trees. The outer
shells are hacked open with machetes and the sweet milk inside is either downed
on the spot or poured into two liter bottles for later use. The meat inside is
scooped out and grated. This grated coconut is then squeezed into warm water,
turning it milky white. Next, rice is tossed in and cooked in coconut luxury
until it’s simmered to perfection.
My food arrives. Fresh veggies, quickly sautéed in coconut
oil, are piled high on a bed of sweet coconut rice and my lobster (also slathered
in coconut oil) is well…heavenly.
We cook with coconut oil at home every day here in the
tropics. We use it as a base in many of our organic body lotions, and we add it
to bamboo and lemongrass infused vinegar to make an amazing, skin loving,
healing body wash. We use it in our sunscreen, condition our hair with it, and
even bathe our two little adopted street dogs with it.
Oh…and Charlie, our adopted
pup, he loves it!
